Virgin Hotels San Francisco has one of the most incredible rooftop bars in the city – a sweet spot called Everdene – where the cocktails are as amazing as the views. There you will find Everdene’s Lead Bartender Patrick Smith serving up seasonal cocktails and inventive new flavors that’ll surprise and delight.
Hailing from Amador County, Patrick has earned his chops behind bars all over Northern California and Lake Tahoe – from West Shore Cafe to Best Pies Pizza and most recently, a long-standing tenure at Tacolicious Restaurants before joining Everdene. A creative, inquisitive and customer-focused bartender like Patrick not only captivates us, but also his guests. So, we figured we’d ask for more info, via Q&A:
How long have you been behind the bar?
What’s a fun fact about you?
I have a tattoo of a goldfish on my leg that I did myself.
Define the perfect cocktail
An old fashioned. It uses the method of the first cocktail, spirit sugar water and bitters. I like making them with tequila or mezcal for a modern twist.
If you could only have one cocktail for the rest of your life, what would it be and why?
One cocktail for the rest of my life would probably be a Hemingway with mezcal because I think that’s what retirement tastes like.
What are some of your hobbies and passions?
My main hobby is photography and it happens to be my passion too. I also love thrift shopping.
What’s your spirit animal?
My spirit animal has always been a wolf.
